In Spanish, the name of my favourite food is "Lomo de ciervo al champiñón a las finas hierbas". In English, it would be something like "Venison loin with mushrooms and fine herbs". It should be eaten with a good Cabernet Sauvignon, like "Chateau Vieux" (1999) or "Catena Zapata" (TOO expensive)... Of course, it's REALLY expensive, but it's worth the money. The venison loin is too strong and salty, so it should be cooked in a way that the meat is still red, but not raw. If you cook it too much or with high temperatures it becomes too hard to eat (and that means you have ruined a us$70 dish). The mushrooms should be small, white and soft.

The wine is another story. The Chateaux Vieux is not so expensive and it's good enough for this dish, but the "Catena Zapata" would be ideal. It's strong, wood flavoured and it tastes almost like a bordeaux.

I only ate that ONCE in my life, yet I can't find something better.

I'm from Argentina, yeah, but not a gaucho! Hehe... The real gauchos "died" more than 100 years ago when the economic balance shifted towards the big landlords. They became pawns to them. But still we have some of those guys around here. The book "Martín Fierro" illustrates the last days of the gauchos (it's a book written in rhyme).

Venison has a very particular flavour. It's like boar's meat, but stronger. The mushroom makes the meat flavour softer, and the herbs complement the sauce. And the wine... Oh god, I can't describe it with words...

Obviously, you get more than just this small amount of meat...
