And also you can be in support and still be able to pvp as a knight, the defensive spells actually help as opposed to having all attacks at lv 5. If you just rely on hitting stuff with lv 5 knocks and attacks as a knight you will lose anyways.

I don't recall Beardo having knocks lvl 1. IIRC he had knocks level 3 or 4. Also, knight pvps are boring and full of derp irregardless. If it is two support knights, they will just cast defensive support/stance and it will depend on who does more 20 normals first, or something else like that. It hardly relies on skill.
