In fact, this is not entirely true. The middle words can't be a complete mess because certain rearrangements make words more difficult to comprehend than others. Most of the words in the paragraph which was distributed in a chain email some time back use short or familiar words, and the three letter words keep unaltered so you can keep track of the general structure of the paragraph. Also, many words only switch adjacent letters, which also helps. Take porbelm, for example, that's easy, but pborelm is harder. It's also harder to identify a word if its anagram makes a proper word itself.
